Tiramisu met appel en speculaas

Een dessertje 'met liefde' gemaakt en dan nog het favorietje van de echtgenoot! In onze familie is het zowaar een klassieker geworden. Deze tiramisu was een onderdeel van mijn Kerstmenu in 2010. En ondertussen heeft zowat de hele familie een kopietje van dit recept.

Mijn inspiratie heb ik gehaald uit een magazine van Spar. Natuurlijk, ik zou ik niet zijn, als ik er mijn eigen draai niet aangeef.
In Casa Latti houden we het nog altijd een beetje gezond en letten we op de calorietjes.


Wat heb ik gebruikt voor 8 glaasjes:

1 appel, Jonagold
1 dl appeljenever
100 g Luikse stroop
8 speculaas koekjes + 2 extra voor afwerking
250 g mascarpone
250 g ricotta
3 eidooiers
3 eiwitten
90 g kristalsuiker

Hoe ga je tewerk:

Schil de appel en snij in fijne brunoise. Giet er de appeljenever over. Dit voorkomt verkleuring.
Laat 15 minuutjes trekken. Giet door een zeefje en vang de jenever op.

Maak een appelsausje. Daarvoor meng je Luikse siroop met de opgevangen appeljenever. Warm op de sudderplaat en roer goed tot je een vloeibare saus bekomt.

Kruimel de speculaas, dit gaat prima met een plastiek zak en een deegrol.

Splits de eieren, klop de eidooiers met 65 gram suiker tot een luchtige ruban, met de garde van de Kitchenaid.

Klop de mascarpone los met wat van het appelsausje. Voeg de ricotta toe en meng luchtig.

Klop de eiwitten met 25 g suiker tot sneeuw en spatel voorzichtig onder het kaasmengsel.

Verdeel de speculaaskruimels onder in de glazen. Druppel er wat appelsaus op.
Daarop schep je achtereenvolgens de helft van de crème, uitgelekte appelbrunoise, wat appelsaus en de rest van de crème.

Zet in de frigo gedurende 4 tot 6 uur. Je kan de glaasjes ook perfect de dag vooraf maken.

Net voor je de glaasjes opdient, kruimel je er de resterende speculaas over en een streep appelsaus.

Tiramisu with apple and speculoos (=A typical Flemish cookie and the same as the Dutch Speculaas, you can compare it with Gingerbread, it is a sort of caramelized biscuit).

A dessert made 'with love' and the favourite dessert of the husband! In our family it's a classic. This tiramisu was a part of my Christmas menu in 2010. Nowadays the whole family has a copy of my recipe.

I was inspired by a recipe of a 'Spar' magazine (Spar is a Belgian Supermarket). Of course, it wouldn't be me if I didn't give it my own twist. At 'Casa Latti' we still keep things healthy and we pay attention tot the calories.


What did I use for 8 glasses:

1 apple (Jonagold)
0,17 pt of Apple jenever (= Apple flavoured schnapps / gin)
3,52 oz apple syrup
8 speculoos cookies (a Flemish caramelized biscuit) + 2 extra (for decoration)
8,8 oz mascarpone
8,8 oz ricotta
3 egg yolks
3 egg white
3,17 oz granulated sugar


What to do:

Peel the apple and cut into fine dices (we call this 'brunoise'). Pour the Apple jenever over the apple. This prevents discolouration.
Allow the bits of apple to suck up the 'jenever' for 15 minutes. Pour trough a strainer and catch the jenever.

Make an apple sauce. Therefore mix the apple syrup with the recuperated apple jenever. Warm on the simmering plate and stir well until you obtain a liquid sauce.

Crumble the biscuits, this goes just fine with a plastic bag and a rolling pin.

Separate the eggs, whisk the egg yolks with 2,29 oz sugar until fluffy. Use the garde in the Kitchenaid.

Whisk the mascarpone loose with some of the apple sauce. Add the ricotta and mix until fluffy.

Whip the egg whites and 0,88 oz of sugar in a very clean bowl to soft peak stage.

Spread the crumbs at the bottom of the glass. Drizzle some apple sauce on it.
Then you arrange successively half of the cream, drained cubed apple, some apple sauce and the rest of the cream.

Put in the fridge for 4 to 6 hours. If you want you can easily make the glasses the day before.

Just before you serve these delicacies, crumble over the remaining caramelized biscuit and a dash of apple sauce.
